Ingredients: Cocoa wafers: 100 grams (provides the chocolate base). Cocoa butter: 50 grams (adds smoothness and shine). Sweetener: 2–4 tablespoons of powdered sugar, honey, or a sugar substitute (to taste). Optional flavorings: A pinch of vanilla extract, sea salt, or spices like cinnamon. Optional add-ins: Nuts, dried fruits, or rice crisps. Melt the cocoa butter: Heat the water to a gentle simmer. Add the cocoa butter to the bowl and stir until completely melted. Incorporate the cocoa wafers: Add the cocoa wafers to the melted cocoa butter, stirring constantly until smooth. Sweeten and flavor: Gradually sift in powdered sugar to avoid clumping, stirring until fully dissolved. Add any desired flavorings (like vanilla or salt) and mix thoroughly. Temper the chocolate (optional): If you want a glossy finish and a nice snap, allow the mixture to cool to about 27°C (80°F) by stirring off the heat, then gently reheat to 31–32°C (88–90°F). Pour into molds: Pour the chocolate mixture into silicone molds or a lined baking dish. Tap the mold gently to remove air bubbles. Cool and set: Place the molds in the refrigerator or let them set at room temperature until firm. Unmold and enjoy: Pop the chocolate out of the molds and store it in an airtight container in a cool, dry place.
